Completely plant based, organic where possible, each of the dishes is crafted and created by Plant based private Chef Kelly Mason. We are so excited to include a number of her dish recipes here on our blog so you can bring our retreat food home.
This is the butter bean two way with tomato and olive salsa planned to be served on the 2025 immersion retreats…
Serves 4
Butter bean puree
1 jar butter beans
Juice 1 lemon
1/4 cup water
1 tbsp good quality olive oil
1 tsp dijon mustard
1/2 tsp fresh garlic (minced)
salt to taste
mix all ingredients together and blend until smooth - serve as the base for your final dish
Butter beans
1/2 jar butter beans
salt to taste
1 tbsp olive oil
1 tbsp lemon juice
1 tsp lemon zest
Place beans and salt in pan and cover with water. cook for around ten minutes. Add to bowl and mix with remaining ingredients - serve on top of the butter bean puree for your final dish
Tomato & Olive salsa
200g cherry tomatoes (chopped)
5 green olives (chopped)
3 tbs good quality olive oil
1 tbsp capers (chopped)
1 tbsp caper brine
1 tbsp lemon juice
1 tsp maple syrup
salt to taste
mix all ingredients together in a bowl and place in to the side until ready to plate
